Ingredients
1 cup heavy whipping cream
2–3 tbsp powdered erythritol (or preferred keto sweetener)
1 tbsp unsweetened cocoa powder
1 tsp vanilla extract
Pinch of salt
Chocolate coating:
1 cup sugar-free chocolate chips
1 tbsp coconut oil
Instructions
- Make the fluffy filling
Pour the heavy cream into a mixing bowl.
Whip until soft peaks form.
Add sweetener, cocoa powder, vanilla, and salt.
Continue whipping until thick and fluffy (like mousse).
- Shape and freeze
Spoon or pipe the mixture into bar shapes on parchment paper.
Freeze for 1–2 hours until firm.
- Coat in chocolate
